Appetizer with caviar in shots

A multicolored layered snack looks fancy and elegant. Transparent small cups take up less space than portioned bowls. We do not  consider  shots being just utensils for strong alcoholic drinks anymore, since they are quite suitable for appetizer snacks. Smoked capelin and red caviar coexist perfectly in one appetizer and gives it an exclusive flavoring nuance.

Products we need for caviar appetizer in shots:

  • red caviar – 100 g,
  • smoked capelin – 3 pcs.,
  • soft cheese – 150-200 g,
  • eggs – 3 pcs.,
  • mayonnaise – 60 g,
  • spinach – 1 bunch,
  • sunflower oil – 30 ml,
  • salt – to taste,
  • dill.

Cooking sequence:

  1. Capelin is used to give a soft smoked flavor to soft cheese. We will need three cold smoked fish.
  2. Soft, slightly salted or even unsalted cheese is cut into medium sized pieces.
  3. Spinach leaves are cut into strips, fried for 1-2 minutes over medium heat with constant stirring. Spinach is fried in vegetable oil (leave the pan uncovered). Soft fried leaves are placed in a bowl with pieces of cheese.
  4. Take smoked capelin: remove ridges with costal bones, remove skin. If there is caviar, it can be used with smoked fish fillet.
  5. Capelin, spinach and cheese are punched with a blender. Add salt to taste.
  6. Boil hard-boiled eggs, separate the yolks. The cooled yolks are kneaded with a fork, mixed with chopped fresh dill.
  7. Add 2 teaspoons of mayonnaise.
  8. Knead the yolks with a fork. The mass should be soft and uniform.
  9. Proteins are crushed with a fork so that a coarse-grained texture is obtained.
  10. Add mayonnaise. If the mayonnaise is not very salty, you can add a pinch of salt to the protein mass.
  11. 2/3 shots are filled with a green paste made of cheese and smoked capelin.
  12. The next thin layer is the yolks with dill.
  13. The protein layer is the base for red caviar. Proteins should not be too greased with mayonnaise, so that the eggs do not sink in it.
  14. The topmost layer is red caviar. It is placed in the center so that it does not touch the edges of the glasses.
  15. Finishing the decor with tiny fresh spinach leaves.
  16. Before serving shots, it is advisable to keep for 20 minutes in the refrigerator.
